The Pleurotus mushrooms of La Catedral de Navarra (“Setas”) are selected in winter, with a maximum umbrella size of 6 cm.
Whole peeled tomatoes in brine. Carefully chosen to reflect balanced acidity and sugar content. La Catedral de Navarra tomato has a red consistent flesh and an exquisite taste.

These are grown near in Winter when the cold converts them into a fine and sweet delicacy. Naturally preserved so that they arrive at the table as if they were freshly cooked.
