These are grown near in Winter when the cold converts them into a fine and sweet delicacy. Naturally preserved so that they arrive at the table as if they were freshly cooked.
Pleurotus mushrooms (Pleurotus Ostreatus) in brine.
The Pleurotus mushrooms of La Catedral de Navarra (“Setas”) are selected in winter, with a maximum umbrella size of 6 cm.
Porcini mushrooms (Boletus Edulis) in olive oil.
Wild mushrooms (“Hongos”) are selected from the most fertile areas in Spain for their growth and are then prepared fresh and preserved in quality olive oil.
