SELECTION OF FRENCH CAVIAR
Discover our Baeri Baïka® Royal Caviar, a briny caviar with small, delicate, brown eggs. It gives a strong first impression in the mouth with a dominant fruitiness, mineral notes and very little brininess. Baïka® comes from Baeri sturgeon that’s been farmed in France. The ‘Royal’ Petrossian selection guarantees a full-bodied, rich caviar that will impress you and your guests from start to finish.
Salted, beechwood-smoked cod roe is blended into a paste, then mixed with different ingredients to make a flavourful, luxurious cream seasoned with wasabi, to which added flying fish roe. With a smooth and creamy texture, the flavour is sweet yet also a bit spicy thanks to the wasabi, and is a beautiful green colour. Ideal for spicing up morsels of Red King Crab, or to complement a plate of smoked salmon. Perfect on toasted brown bread adorned with a bit of salmon roe, or just as is, on top of lightly salted crackers.
Tender wild scallops, lightly smoked, to serve either
as a starter or main course. Serve cold or hot, whole or thickly sliced, on salad, accompanied by balsamic vinegar or spiked with a little Alverta caviar.
Russian-style malossol gherkins are a great classic for serving with salmon and other Petrossian delicacies. In Russian cuisine, ‘malossol’ is the term used for foods that are very lightly salted. Malossol caviar is the iconic symbol of the Maison Petrossian. Originating in Poland, these large pickles are first prepared in a brine that’s very lightly salted and is seasoned with many highly aromatic herbs and spices like dill, garlic and mustard seeds. This legendary recipe gives these Russian-style malossol pickles a more sweet and sour flavour compared to French pickles.
