Yellowfin tuna (Thunnus albacares), is probably the most used and well-known fish in the canning world. The best parts of the pink and tasty meat from the yellowfin tuna are selected for the preparation of this product. Small variations are expected due to its preparation: traditional and by hand.

Spanish white tuna (Thunnus alalunga) is the most valued fish in northern Spain. Many small traditional boats arrive to port every day to auction the fish in the Cantabrian fish markets. The auctions of Gijón and Avilés are where we acquire the fresh tuna to process it at its maximum quality. From July to September, the tuna coast becomes a true economic and social hub in the coastal towns throughout the Cantabrian due to its traditional, seasonal fishing.
