Recipe made with the characteristic poached beans, with fine and delicate skin, from the Ribera del Ebro area. Healthy, light and digestive vegetable stew, cooked in a traditional way only with “pochas” beans, tomato, pepper and garlic.
These are grown near in Winter when the cold converts them into a fine and sweet delicacy. Naturally preserved so that they arrive at the table as if they were freshly cooked.
Whole peeled tomatoes in brine. Carefully chosen to reflect balanced acidity and sugar content. La Catedral de Navarra tomato has a red consistent flesh and an exquisite taste.
