di Prato escape: the crumbs produced when
we slice our biscuits are an intriguing alternative
for preparing crusts for cheesecakes and such
new recipes as the Bricioli Crack Pie.

Staying true to the original 1958 recipe, these toasted brioche slices are made with soft wheat flour, butter, free-range eggs, fresh yeast, and sea salt—completely free from sugar and glucose syrup.
Their delightful aroma comes from a slow, double fermentation process. Once baked, the brioche is sliced and left to rest for 24 hours before being toasted to achieve its signature golden color and light, crumbly texture.
Cut thick for extra sturdiness, these slices hold their shape perfectly, making them ideal for spreading butter, jam, peanut cream, or pairing with savory options like mascarpone or robiola.

Since 1858, Antonio Mattei biscuits have been freshly baked daily and individually packaged by hand in the signature Blu Mattei bag.
To maintain freshness, biscuit tins have been used traditionally and offered by the factory since the last century, doubling as reusable containers.
This cookie jar continues a collection of tin designs created by Florence-based illustrators Simone Massoni and Ilaria Falorsi, showcasing Tuscany as seen through the eyes of the Antonio Mattei factory.
The design, inspired by a map-like geometric grid, highlights a few of Tuscany’s most iconic landmarks, such as the historic Biscottificio in Prato and the new Florentine Bottega Museum. Antonio Mattei, the founder, is depicted humorously as a vintage tourist with his cane.
The blue color evokes the stunning Tuscan skies, visible from the countryside, seaside, mountains, and historic towns.
