  • AUTHENTIC DUCK FOIE GRAS
    Petrossian foie gras, prepared according to traditional methods. Petrossian has been selling foie gras for 30 years now. 30 years during which our foie gras first conquered the clients of our Parisian boutiques, and then all of the Petrossian clients. Lightly-cooked foie gras is simply pasteurised, meaning that it’s cooked through to a mere 70 to 85°C. That’s how it retains all of its freshness, flavours, and smoothness.

  • EXCEPTIONAL FOIE GRAS
    Foie gras that has inherited our greatest savoir-faire. Whole duck foie-gras, with thin slices of truffles, that’s poached in an aromatic herb broth before being simply pasteurised to improve the preservation of its flavours and aromas.

    Lightly-cooked goose foie gras, prepared according to the exclusive Petrossian recipe and simply pasteurised, meaning that it’s cooked through to a mere 70 to 85°C. Vacuum-packed and to be refrigerated, in order to retain its aromas and smooth texture.

  • FOIE GRAS WITH TRUFFLE
    Goose foie gras, magnificently flaked with truffle. Whole, goose foie gras is lightly poached in an aromatic herb broth, then flaked with black truffles to highlight their intense flavour and silky texture.

  • THE AUTHENTIC JAR OF DUCK FOIE GRAS
    Thanks to the semi-preservation of the glass jar, this foie gras has been produced in optimal conditions for you to best enjoy its flavours and aromas.

  • The Dome of Whole Goose Foie Gras with Truffles has been a speciality of the Petrossian House for more than 30 years. This foie gras composed of 5 % of black truffle (Tuber melanosporum) is prepared in the shape of a dome, to give it this beautiful aspect which will embellish your table.
