THE CLASSIC, BY PETROSSIANThis classic tarama is salted, beechwood-smoked cod roe blended into a paste. Then the tarama is mixed with different ingredients to make a flavourful, luxurious cream to which we add a bit more cream for extra sweetness. This tarama is based on a traditional Greek recipe made with crème fraiche, created in 1930 by the Petrossian family. It has a pure, sweet flavour that’s typical of smoked roe, and is perfect for an aperitif, enjoyed with crunchy raw vegetables or on toast.100g

Classique is the second wine produced at Rupert and Rothschild Vignerons, in Simonsberg South Africa. The partnership was formed in 1997 and now produces three wines, all of which are richly concentrated, complex, yet contrasting. Classique is always based on a Bordeaux blend, and traditionally has consisted of almost equal amounts of Merlot and Cabernet Sauvignon. This wonderfully complex and smoky wine offers immediate charm, alongside the potential to cellar for a decade from vintage.
Aromas of red plum, raspberries and cherries are prominent, layered with forest floor and oak spice expressed as toasted caramel and walnut. The palate has a fresh red fruit core with soft-textured tannins and good persistence. Pair this delicious wine with an oak-smoked duck breast, roasted baby beetroots, beetroot puree, crispy Jerusalem artichokes, and a roasted cherry jus. The earthiness of both the artichokes and the beetroots, complimented by the jus will round off this wine beautifully.

The Biscotti di Prato – also commonly known as cantucci or cantuccini with almond – have been baked every day by our Biscottificio since 1958 and are part of the Tuscan confectionery tradition that sees them as the perfect end of a meal in combination with Vinsanto.
This ‘Biscottiera’ created by the talented illustrators Simone Massoni and Ilaria Falorsi is the fifth collector’s tin designed for the Biscottificio Mattei and contains 125 g of Biscotti di Prato.
Prepared with only 5 simple ingredients: flour, sugar, free-range eggs, almonds and pine nuts, they do not contain preservatives, animal fats or vegetable fats.
Recommended pairings: – for the end of a meal in addition to the classic Vinsanto, also perfect with soft grappa – for a small snack, with coffee or cappuccino
