La Gricia Sauce
La Gricia is the “white” version of the very popular amatriciana. It is actually the original recipe, before the advent of the tomato in Italy (16th century). The ingredients are a perfect seasoned bacon, an excellent Pecorino, white onion, a handful of spices, all linked to an excellent extra virgin olive oil.
Ideal with: rigatoni, half sleeves.

Onion 49%, extra virgin olive oil, cured pork cheek (pork, salt, dextrose, sugar, natural flavors, antioxidant: ascorbic acid, preservatives: sodium nitrite and potassium nitrate) 15%, Pecorino Romano cheese DOP ( sheep 's milk, salt, rennet) 13%, white wine (contains sulphites ), acidifier: lactic acid, garlic, black pepper.
