Amedei’s Crus come from defined production areas, since they are the result of a particular climate and sunshine in specific regions, just like grapes. Thus, each of them carries its own individual characteristics and distinctive flavor and can be considered as the most immediate and “wildest” expression of the cocoa bean they are made from. Each variety represents a part of the currently existing cocoa plants’ genetic diversity, as they are all obtained from the beans that best retain the characteristics of each tree type, selected and grown to precise standards by the producers in their countries of origin. The rare, precious beans of this chocolate, from Madagascar, create a product with a full, slightly sour flavour with hints of mint. An embracing sensation, particularly memorable for the complex bouquet and the perfect balance between fruity and toasty notes.
Mama from Santomiele is a homage to Mother Earth and the warm, sweet embrace that she offers. The slowly grown and hand-picked Dottato figs are paired and filled with extra dark chocolate (70%), Puglia almonds, walnuts and a touch of vanilla.
It all starts in the countryside, where figs are gathered before sunrise. Afterwards they are brought to the Opificio Santomiele, where they are peeled by hand and placed to dry in the sun and wind for 12 days. The result of this slow and old manual labor is a “mondo” fig tree. Ivory in color, it produces natural scents of honey, hay, citrus and spices of the Mediterranean gardens.
Maris is a praline inspired by the sea that combines the taste of chocolate with the flavor of salty scents. The salt chocolate shell contains a soft white chocolate filling with nori seaweed and a pinch of bottarga. A surprise on the palate where a delicate and balanced taste stands out.

Mastrocioccolato is a big fragment of extradark chocolate (70% cocoa) poured into wooden molds to give it the elegant touch of the “handmade”. The aroma is unique and persistent for the presence of white and soft “cultivar Dottato” figs peeled and sun-dried. The hazelnuts “la tonda di Giffoni”, the crunchiness, with hints of caramel confers to it scents typical of the Cilento’sTerroir.
