Thus, each of them carries its own individual characteristics and distinctive flavor and can be considered as the most immediate, “wildest” expression of their cocoa beans. Each variety represent a part of the currently existing genetic diversity of cocoa plants, as they are all obtained from the beans that best retain the characteristics of each tree type, selected and grown to precise standards by the producers in their countries of origin.
