This Terre Exotique paste is made with Yuzu, an East Asian citrus fruit similar to a small lime. It was introduced to Japan during the Tang dynasty in around 700 AD. It is harvested in October in Koshi prefecture in Japan and is yellow or green depending on its ripeness. It tastes like mandarin or grapefruit.
You can use yuzu fresh, or use its juice, its zest, ground or as pearls.

Harvested on the Malabar coast then smoked using beech wood. This strong pepper has smoky and woody notes. Crack roughly with a pestle and mortar. Try it with duck breast, salmon or grilled steak.
The Amazon chilli pepper from Colombia is very a strong chilli, amongst the hottest. Its fruity notes and its subtle acidity are similar to Tabasco chillis. It is harvested before being fully ripe which explains its pale yellow colour. It will enliven exotic saucy dishes and your pre-dinner dips.
