Fratelli Spigaroli of Antica Corte Pallavicina have been producing ‘salumi’ for over 150 years, starting with great-grandfather Carlo who was the trusted pork butcher of Maestro Giuseppe Verdi! Spigaroli produces and sells no more than 5000 Culatelli a year, including a limited number that is custom aged for some of the most distiguished clientele in the world, including the Royal Family of England and especially King Charles III, who once offered Spigaroli a chance to work for him in the UK. The answer was simple: “Thank you, but I respectfully decline. I am an artisan. My hams need their Pallavicina curing cellars…their Po fog”.
